Ingredients for the shortcrust pastry

• 300 g wheat flour

• 100 g spelt flour

• 2 eggs

• 150 g butter

• 1 cl vinegar

• Salt and water to taste

Mix the flours and make a well in the middle for the softened butter, eggs, vinegar, salt and water. Knead well until you obtain an even mixture. Let rest in a cool place for 15 minutes.

Ingredients for the filling

• 100 g parmesan

• 200 g boiled spelt

• 200 g onion

• 200 g fontina cheese

• 75 cl milk

• 20 cl cream

• 8 eggs

• Salt and pepper to taste

Beat the eggs, then add the milk, cream, parmesan, salt and pepper.
Line a pan with the shortcrust pastry, then add the spelt, sliced onion and diced fontina. Pour the mixture of milk and eggs into the pan. Bake in the oven at moderate heat for about 1 hour.
