• 150 g butter

• 100 g icing sugar (for dusting)

• 250 g granulated sugar

• 6 eggs

• 300 g wheat flour

• 10 g yeast

• 150 g spelt flour

• 1 lemon

• 400 g apples

• Vanilla to taste

Use a stand mixer to mix the eggs with the sugar and flavourings (lemon zest and vanilla), then add the previously whipped butter.
Sift the flours and yeast. Combine the wet and dry ingredients, then add the peeled and finely chopped apples. Pour the mixture into greased and floured muffin tins.
Bake in the oven at 190°C for 25/30 minutes. Remove from the tins and let cool, then dust the muffins with icing sugar.
