Ingredients for 4 people

• 400 g spelt lasagnette

• 200 g spelt flour

• 100 g durum wheat flour

• 4 eggs

• 30 g extra virgin olive oil

Make a smooth dough with the two flours, eggs, oil and a pinch of salt. Let it rest for 30 minutes. After this time, begin rolling it out (strictly with a rolling pin). Once you have obtained a sheet 1-2 millimetres thick, cut it into squares about 3 cm per side with a sharp knife.

For the broccoli cream

• 300 g broccoli

• 40 g salted anchovies (washed and filleted)

• 1/2 cup extra virgin olive oil

• Salt

• Chopped chilli pepper to taste

• 1 clove garlic

Wash and trim the broccoli, then cook it in plenty of boiling salted water. Once cooked, drain and set aside. Use the same water to cook the lasagnette.
In a saucepan, sauté the garlic and the chopped chilli pepper, then add the anchovies. Cook for a few minutes, add the broccoli and continue cooking over moderate heat until it reaches the consistency of a cream.
Cook the pasta in the water you used for the broccoli, toss it in the pan with the broccoli cream and serve it with a drizzle of olive oil and, if desired, grated pecorino.
