Ingredients for 6 people
• 400 g boiled spelt
• 200 g sausage
• 200 g white leeks
• 1 dl aromatic white wine
• 200 g cow’s milk cheese
• 3 dl milk
• 60 g grated pecorino
• Extra virgin olive oil to taste
Instructions
Finely dice the cheese, add the milk and let it melt for about 10 minutes in a bain-marie.
Finely slice the leek, saute it in a little oil and add the peeled sausage cut into small pieces, add and cook off the white wine, then add the spelt and cook for a few minutes. Remove from the heat, stir in the pecorino and serve with the cheese fondue on the side.
