Ingredients for 4 people

• 200 g Garfagnana spelt

• 100 g sausage

• 100 g pancetta

• 1 onion

• 2 garlic cloves

• 2 porcini mushroom caps

• 2 ripe tomatoes

• 1 cup extra virgin olive oil

• 1 bunch of herbs: sage, rosemary, calamint, thyme, basil

Boil the spelt in plenty of salted water, drain and rinse under running water. Lightly saute the onion, garlic, diced meats and bouquet garni in a pan. Remove the herbs after they have flavoured the other ingredients. Allow everything to cool, then mix the sauce with the previously boiled spelt, season with salt and pepper, add the extra virgin olive oil, and mix well. Arrange everything in a serving tray, sprinkling it with the thinly sliced mushrooms, diced tomatoes and some basil leaves.
