Ingredients for 4 people

• 150 g spelt

• 100 g San Marzano tomatoes

• 60 g pitted black olives

• 1 bunch basil

• 1 fresh Tropea onion

• 1/2 cup apple cider vinegar

• Extra virgin olive oil

• Salt

• Pepper to taste

• 1 fresh sprig marjoram

Instructions
Put the spelt in plenty of warm water and let it soften for half an hour (more than soaking, you’re washing it), then place the spelt in a pot with salted water and boil it for 30 minutes.
While the spelt is cooking, dice the tomatoes, chop the basil, slice the onion and soak it in the vinegar for a few minutes.
Once the spelt is cooked, add it to a tureen while still hot and add all the ingredients, including the onion drained from the vinegar and the pitted olives.
Add salt, pepper, oil to taste and season it with the marjoram.
Serve the spelt when it is completely cold.
