Ingredients for 4 people

• 150 g Garfagnana spelt

• 6 ripe tomatoes

• 15 black olives

• 10 basil leaves

• 4 garlic cloves

• Oil

• Salt

• Chilli pepper

Boil the spelt in a pot, adding a pinch of salt. Cook it for about two hours. Once the spelt is cooked, let it cool. Mix the oil, crushed garlic cloves, diced tomatoes, basil, salt and chilli pepper in a bowl. Leave to macerate for at least half an hour. Drain the spelt and season it with this mixture, adding the pitted and sliced olives. Season with salt, mix well and serve.
