Ingredients for the dough
• 200 g flour
• 100 g spelt flour
• 1 egg
• 100 g butter
• Juice of 1 lemon
• 100 g sugar
• Milk to taste
Instructions
Mix the two flours and make a well in the middle for the softened butter, sugar, egg, lemon juice and milk (if necessary).
Knead well until you obtain an even mixture. Let rest in a cool place for 15 minutes.
Ingredients for the filling
• 100 g ricotta
• 200 g boiled spelt
• 150 g sugar
• 100 g mixed raisins and pine nuts
• 2.5 dl milk
• 1 dl cream
• 3 eggs
• Zest from 1 orange
Instructions
Beat the eggs, then add the milk, cream, spelt, sugar, raisins and pine nuts, and lastly the grated orange peel.
Roll out the dough and line a cake pan.
Pour the mixture into the pan.
Bake in the oven at moderate heat (from 170°C to 190°C) for about 40/45 minutes.
