Ingredients for 4 people

• 300 g Garfagnana spelt

• 500 g tomatoes

• 1 bouquet garni

• Parmesan cheese to taste

Boil the farro in plenty of salted water for about 20 minutes. Drain and season with the chopped fresh tomatoes, extra virgin olive oil and aromatic herbs to taste and a good dose of grated parmesan.
