Ingredients
• 200 g spelt flour
• 100 g wheat flour
• 50 g potato starch
• 100 g butter
• 100 g sugar
• 4 hard-boiled egg yolks
• 100 g cow’s milk ricotta
• 1 teaspoon baking soda
• Lemon zest and essence to taste
• Salt to taste
Instructions
Mix the butter, ricotta and sugar until it has the consistency of a paste, then add the pureed egg yolks and, once the ingredients have been mixed well, add the two flours, starch, baking soda, lemon essence and zest, and a pinch of salt. Let the dough rest for 5 minutes in the refrigerator, then make small balls. Bake them at 180°C for about 20 minutes. Garnish with melted chocolate.
