Ingredients for 4 people
• 200 g spelt
• 100 g pecorino
• 80 g Bazzone ham (cut into pieces the same size as the spelt grains)
• Sprigs of thyme
• Extra virgin olive oil, salt to taste
• 5 dl Borlotti bean broth
For the broth
• 200 g dried Borlotti beans
• 1.5 L water
• 2 cloves garlic
• Sage
Instructions
Saute the garlic and sage with extra virgin olive oil, then add the beans (previously soaked) and water. Cook for 1 1/2 hours. Once cooked, puree the broth.
Soak the spelt for 30 minutes in warm water, cook it in the bean broth for about 30/40 minutes. Once cooked, the spelt will have absorbed the broth. Remove it from the heat. Chop the thyme, cut the ham and grate the pecorino; add the ingredients to the spelt, salt to taste, season with raw extra virgin olive oil. Serve warm.
